This current job has me thinking about future plans and what I want to do long term. I still have ambitions of my own show in a food truck, and Ric and I have talked some about both the sacrifices and liabilities that would involve. But, I’ve also had some interesting attention from more traditional kitchens.
Those who know me know I have a restless soul. I like to be on the move. So, for me, having a mobile food business seems ideal. But, it’s a huge commitment, not to mention the risk.
Having a business is stressful. It requires a lot of hustle. I work hard now, but that’s all I do. I don’t have to worry about keeping a business going. I just work and get paid. There’s some comfort in that.
On the flip side, I like running my own show. I like cooking my own food, being creative, and building something for myself.
It’s a quandary. At some point soon, I’ll need to make a decision one way or the other. I hope that when I do, I will be satisfied with my choice.
